Why is stretching dough so hard?

Method

  1. Mix yeast, sugar and salt into the water and let it sit and activate for 10-15 minutes until the yeast is foamy.
  2. Add flour to a large bowl (of a stand mixer if you have one), then add the oil and water/yeast mixture and mix together for a few minutes.
  3. Turn out the dough onto a lightly floured surface and knead by hand for a few minutes until the dough is smooth.
  4. Lightly coat the inside of a large bowl with olive oil and place the dough into the bowl, then cover with a towel or plastic wrap and let it rise in a warm place for at least 45 minutes.
  5. Turn the dough back out onto a lightly floured surface, divide into two halves, then roll/stretch them out. Add sauce and toppings then bake in a preheated oven at 220C / 425F for about 10-15 minutes until the crust is brown.
