Method
- Peel and dice potatoes. Rinse in cold water, then boil, stirring occasionally, until they fall apart when poked with a fork.
- A few minutes before the potatoes are done, heat the butter and cream in a sauce pan. Peel and crush the garlic, then add it along with the herbs and let it simmer for a few minutes.
- Drain the potatoes and return to pot. Add the butter/cream/garlic mixture and the dry spices, then mash.
Variations
- Add some freshly shredded cheddar cheese while mashing
- Use thin-skinned potatoes and leave the skins on
- Add some flavorful red spices like chipotle or smoked paprika
